Ingredients
  

  • 1/4 cup all-purpose flour
  • 2 tablespoons light brown sugar packed
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 pinch salt
  • 3 tablespoons milk dairy or plant based
  • 1 tablespoon neutral oil such as vegetable or canola
  • 1/4 teaspoon vanilla extract
  • 1/3 cup apple peeled and finely diced

Instructions
 

  • In a microwave-safe mug, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt until evenly combined.
  • Add the milk, oil, and vanilla extract to the mug. Stir until the batter is smooth and free of lumps.
  • Fold in most of the diced apple, reserving a few pieces to press into the top of the batter.
  • Microwave on high for 60 to 90 seconds, checking at the 60 second mark, until the center is set and a toothpick inserted comes out clean.
  • Let the mug cake rest for 1 to 2 minutes before serving so it finishes setting from residual heat.

Notes

For best texture, do not overmix the batter once the flour is added. Use a mug of at least 12 ounces and fill it no more than halfway to prevent overflow. Leftovers keep covered in the fridge for up to 2 days and reheat well in 15 to 20 second microwave bursts.
