Crispy Afghan Chapli Kababs are flat, pan-fried beef patties packed with coarsely crushed coriander, fresh herbs, tomatoes, and dried pomegranate seeds. Equipment

Ingredients
  

  • 1 lb ground beef (80/20 blend) dark meat blend preferred for juiciness
  • 2 tsp whole coriander seeds roughly crushed in a mortar and pestle
  • 1 tsp cumin seeds roughly crushed
  • 1 tsp dried pomegranate seeds (anardana) crushed lightly
  • 1 medium ripe tomato finely chopped and excess moisture squeezed out
  • 2 green chilies finely minced, adjust to taste
  • 3 tbsp fresh cilantro finely chopped
  • 1 tbsp fresh mint leaves finely chopped
  • 1 large egg lightly beaten
  • 2 tbsp all-purpose flour
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground
  • 0.5 cup neutral oil vegetable or sunflower oil for frying

Instructions
 

  • In a large mixing bowl, combine the ground beef, crushed coriander seeds, crushed cumin seeds, dried pomegranate seeds, chopped tomato, minced green chilies, cilantro, mint, beaten egg, flour, salt, and black pepper. Mix well with your hands for about two minutes until all ingredients are evenly incorporated throughout the meat.
  • Cover the bowl with plastic wrap and refrigerate the meat mixture for at least 30 minutes, or up to two hours. This rest period allows the flavors to meld and firms up the mixture so the patties hold their shape during frying.
  • Remove the mixture from the refrigerator and divide it into 8 equal portions. Using your palms, press each portion into a flat, round patty roughly half an inch thick and about 4 inches in diameter. Chapli Kababs should be wider and flatter than a standard burger patty.
  • Pour the oil into a heavy cast iron skillet or frying pan so it comes about a quarter inch up the sides. Heat over medium-high heat until the oil is shimmering and a small drop of water sizzles and evaporates on contact, approximately 2 to 3 minutes.
  • Working in batches of 3 to 4 patties to avoid crowding the pan, carefully lower the kababs into the hot oil. Fry undisturbed for 4 to 5 minutes on the first side until a deep golden-brown crust has formed. Do not press or move the patties during this time.
  • Flip each kabab carefully using a wide spatula and fry on the second side for 3 to 4 minutes until equally golden and cooked through. The internal temperature should reach 160°F (71°C) for ground beef.
  • Transfer the finished kababs to a plate lined with paper towels. Allow them to rest for two minutes before serving. Repeat with the remaining patties, adding a little more oil to the pan if needed between batches. Serve hot with tamarind chutney, naan, or your choice of accompaniments.

Notes

For best results, do not skip the resting period after mixing the meat. Squeeze excess moisture from the tomato before adding it to prevent the patties from falling apart. Avoid moving the kababs while they fry so the crust can develop fully. Leftovers keep in an airtight container in the refrigerator for up to 3 days. Uncooked shaped patties freeze well for up to 3 months and can be fried directly from frozen with a couple of extra minutes added per side.
