Ingredients
  

  • 8 large eggs
  • 4 slices bacon cooked and crumbled
  • 4 oz cream cheese softened
  • 1/4 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 3 tablespoons pickled jalapeno peppers diced and patted dry
  • 1 small fresh jalapeno seeded and minced, optional
  • 2 tablespoons green onion thinly sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Instructions
 

  • Place the eggs in a single layer in a medium pot and cover with cold water by about an inch. Bring to a boil over high heat.
  • Once boiling, cover the pot, remove from heat, and let the eggs sit for 10 to 12 minutes to fully set the yolks.
  • Transfer the eggs to an ice bath for at least 5 minutes, then peel under cool running water.
  • While the eggs cook, cook the bacon in a skillet over medium heat until crisp, about 6 to 8 minutes. Drain on paper towels and crumble once cooled.
  • Dice the peeled eggs into small, even pieces using a knife or egg slicer.
  • In a large bowl, stir together the softened cream cheese, mayonnaise, garlic powder, salt, and pepper until smooth.
  • Fold in the chopped eggs, crumbled bacon, shredded cheddar, pickled jalapenos, fresh jalapeno if using, and green onion until evenly combined.
  • Taste and adjust seasoning, adding more jalapeno or salt as desired.
  • Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.

Notes

For the best texture, do not overcook the eggs past 12 minutes. Pat pickled jalapenos dry before adding to avoid excess liquid. Store leftovers in an airtight container in the fridge for up to 4 days. This recipe does not freeze well due to the egg and dairy base.
