Ingredients
  

  • 1 cup sugar free peanut butter natural, no added sugar or oils
  • 1 cup blanched almond flour finely ground
  • 3 tablespoons powdered erythritol adjust to taste
  • 2 tablespoons unsweetened cocoa powder Dutch-process preferred, plus extra for rolling
  • 2 tablespoons coconut oil melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • 1 pinch sea salt
  • 1/4 cup sugar-free dark chocolate chips optional, for folding in or rolling

Instructions
 

  • In a large mixing bowl, combine the sugar free peanut butter, almond flour, powdered erythritol, cocoa powder, melted coconut oil, vanilla extract, and sea salt. Stir until a thick, uniform dough forms with no dry streaks.
  • Taste the dough and adjust sweetness if needed. Fold in the sugar-free chocolate chips at this stage if using them inside the balls rather than as a coating.
  • Cover the bowl with plastic wrap and refrigerate for 20 to 30 minutes, until the dough is firm enough to roll without sticking to your hands.
  • Using a small cookie scoop or tablespoon, portion out equal amounts of dough. Roll each portion briskly between your palms into smooth, round balls.
  • Roll each ball in additional unsweetened cocoa powder, crushed peanuts, or sugar-free chocolate chips until evenly coated on all sides.
  • Arrange the finished bliss balls on a parchment-lined tray and refrigerate for at least 15 minutes to set completely before serving. Store leftovers in an airtight container in the fridge for up to 10 days.

Notes

For best results, use a finely ground blanched almond flour rather than almond meal, which can make the texture gritty. If the dough is too soft after chilling, stir in an extra tablespoon of almond flour. Always check your peanut butter label to confirm it contains no added sugars. These bliss balls freeze beautifully for up to 3 months. Thaw overnight in the refrigerator before serving.
