Ingredients
  

  • 1/2 teaspoon unsalted butter for the mug base
  • 1 teaspoon brown sugar packed
  • 3 tablespoons crushed pineapple canned, with a little juice, divided
  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • 1 pinch salt
  • 3 tablespoons milk dairy or non-dairy
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon vanilla extract

Instructions
 

  • Place the butter and brown sugar in the bottom of a large microwave-safe mug (at least 12 oz). Microwave for 20 seconds until the butter is melted, then stir to combine into a caramel base.
  • Spoon 2 tablespoons of crushed pineapple with a little juice on top of the butter-sugar mixture. Press gently to form an even layer at the bottom of the mug.
  • In a small bowl, whisk together the flour, granulated sugar, baking powder, and salt until combined.
  • Add the milk, vegetable oil, vanilla extract, and remaining 1 tablespoon of crushed pineapple to the dry ingredients. Stir until just combined with no dry streaks remaining. Do not overmix.
  • Gently pour the batter over the pineapple layer in the mug. Microwave on high for 60 to 90 seconds. The cake is done when the top looks set and a toothpick inserted in the center comes out clean. Start checking at 60 seconds as microwave wattages vary.
  • Let the mug rest for 1 minute to allow carry-over cooking to finish. To serve pineapple upside down style, place a small plate on top of the mug and carefully invert so the caramelized pineapple sits on top. Serve warm with whipped cream or a scoop of vanilla ice cream if desired.

Notes

Use a mug that holds at least 12 oz to prevent overflow as the batter rises during cooking. Microwave wattage varies, so always check at 60 seconds and add more time in 10-second increments as needed. Do not overmix the batter or the cake will turn out tough. Let the cake rest for 1 full minute before eating for the best texture. Store any leftovers covered in the refrigerator for up to 2 days and reheat for 20 to 30 seconds.
