Ingredients
  

  • 4 pieces naan bread full-size, store-bought
  • 1 cup whole-milk ricotta room temperature
  • 1 lb ground beef 80/20 blend
  • 2 large yellow onions thinly sliced into half-moons
  • 3 cloves garlic minced
  • 3/4 cup shredded mozzarella
  • 3 tbsp olive oil divided
  • 1 tsp fresh thyme leaves plus extra for garnish
  • 1/2 tsp fresh rosemary finely chopped
  • 3 tbsp balsamic reduction store-bought or homemade
  • 1 tsp salt plus more to taste
  • 1/2 tsp black pepper freshly ground

Instructions
 

  • Heat 2 tablespoons of olive oil in a large heavy-bottomed skillet over medium-low heat. Add the sliced yellow onions and a pinch of salt. Cook, stirring occasionally, for 25 to 30 minutes until the onions are deeply golden, soft, and caramelized. Do not increase the heat to speed this up — low and slow is essential for proper caramelization.
  • Once the onions are caramelized, push them to the side of the skillet or transfer to a bowl. Increase the heat to medium-high and add the remaining 1 tablespoon of olive oil. Add the ground beef and cook, breaking it apart with a spoon, for 7 to 8 minutes until fully browned. Add the minced garlic in the last 2 minutes of cooking. Drain any excess fat from the pan.
  • Stir the caramelized onions back into the beef. Add the fresh thyme and rosemary, season with salt and black pepper to taste, and stir to combine. Remove the skillet from heat and set aside.
  • Preheat your oven to 425°F (220°C). Line a large baking sheet with foil or parchment paper and arrange the naan pieces on it in a single layer. Lightly brush the edges with olive oil if desired for extra crispiness.
  • Spread a generous, even layer of ricotta over each naan piece, leaving about a half-inch border around the edges. Divide the beef and caramelized onion mixture evenly over the ricotta layer, spreading it to the edges of the cheese.
  • Scatter the shredded mozzarella evenly over each flatbread. Place the baking sheet on the lower rack of the preheated oven and bake for 10 to 12 minutes, until the naan edges are golden and crisp and the mozzarella is melted and lightly browned in spots.
  • Remove the flatbreads from the oven. Immediately drizzle each one with balsamic reduction and scatter a few extra fresh thyme leaves on top. Slice each flatbread into portions and serve right away while hot and crispy.

Notes

For best results, do not rush the caramelized onions — 25 to 30 minutes over low heat is the key to deep, sweet flavor. Drain the cooked beef well to prevent a soggy naan base. Ricotta spreads more easily at room temperature, so pull it from the fridge 15 minutes before assembling. Leftovers keep in an airtight container in the fridge for up to 3 days. Reheat in a 375°F oven or air fryer for best texture. The beef and onion topping can be made up to 3 days ahead and refrigerated separately.
