Ingredients
  

  • 1.5 lbs beef sirloin or ribeye cut into 1.5-inch cubes
  • 2 cups fresh pineapple cut into 1.5-inch chunks
  • 1/2 cup smoky BBQ sauce plus extra for basting
  • 3 tbsp soy sauce
  • 1.5 tsp smoked paprika
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp brown sugar packed
  • 1 large red bell pepper cut into 1.5-inch chunks
  • 1 medium red onion cut into 1.5-inch chunks
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp salt

Instructions
 

  • In a large mixing bowl, whisk together the BBQ sauce, soy sauce, olive oil, smoked paprika, minced garlic, brown sugar, salt, and black pepper until the marinade is smooth and fully combined.
  • Add the beef cubes to the marinade and toss thoroughly to coat every piece. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  • If using wooden skewers, remove them from their water soak (they should have soaked at least 30 minutes). Thread the beef, pineapple, red bell pepper, and red onion alternately onto each skewer, leaving small gaps between pieces for even heat circulation.
  • Preheat your grill to medium-high heat, approximately 400 to 450°F (205 to 230°C). Lightly oil the grill grates with a folded paper towel dipped in vegetable oil held with tongs.
  • Place the skewers on the grill and cook for 10 to 12 minutes total, turning every 3 to 4 minutes to achieve even caramelization on all sides. The beef should reach an internal temperature of 145°F (63°C) for medium doneness.
  • During the final 2 minutes of grilling, brush the skewers generously with additional BBQ sauce. Close the grill lid for 60 seconds to allow the sauce to caramelize into a glossy, sticky glaze.
  • Remove the skewers from the grill and allow them to rest for 3 to 5 minutes before serving. Garnish with fresh cilantro, sliced green onions, and a squeeze of fresh lime juice if desired. Serve immediately.

Notes

For best results, marinate the beef for the full 4 hours to allow the flavors to deeply penetrate the meat. Always use fresh pineapple rather than canned for better caramelization and texture. Cut all ingredients to a similar size so they cook evenly on the skewer. Avoid pressing skewers flat onto the grill grates. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
