Cake

  • 2.5 cups all-purpose flour spooned and leveled
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter softened to room temperature (2 sticks)
  • 1.75 cups granulated sugar
  • 4 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 cup whole milk room temperature
  • 4 gel food colors including blue food coloring, red, yellow, and green

Homemade Buttercream Frosting

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar sifted
  • 3 tbsp heavy cream plus more as needed
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 4 gel food colors for coloring the frosting

Instructions
 

  • Preheat your oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans and line the bottoms with parchment paper circles. Set aside.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until combined. Set the dry ingredients aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter and granulated sugar together on medium-high speed for 4 to 5 minutes, until the mixture is very pale, light, and fluffy. Scrape down the sides of the bowl as needed.
  • Add the eggs one at a time, beating well on medium speed after each addition. Mix in the vanilla extract until fully incorporated.
  • Reduce mixer speed to low. Add the flour mixture in three additions, alternating with the milk (beginning and ending with flour). Mix only until just combined after each addition; do not overmix.
  • Divide the batter evenly among 4 to 5 separate small bowls. Add a different gel food color to each bowl, including blue food coloring in one, and stir each gently until the color is fully and evenly blended throughout the batter.
  • Drop large spoonfuls of each colored batter randomly into the prepared cake pans, layering different colors on top of each other to distribute the colors throughout the depth of each layer. Alternate colors as you go to ensure a varied, balanced distribution.
  • Using a wooden skewer or the tip of a butter knife, make 3 to 4 slow, wide figure-eight or S-shaped strokes through the batter in each pan to create the swirl effect. Do not over-swirl or the colors will muddy together.
  • Bake for 28 to 32 minutes, or until the tops are set and a toothpick inserted into the center of each layer comes out clean. Begin checking at the 28-minute mark. Remove from oven and allow the cakes to cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely.
  • While the cakes cool, make the homemade buttercream frosting. Beat the softened butter with a mixer on medium-high speed for 2 minutes until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating on low after each addition. Add the heavy cream, vanilla, and salt, then beat on high speed for 3 to 4 minutes until the frosting is fluffy and light.
  • Divide the fluffy buttercream frosting evenly among 4 bowls and tint each with a different gel food color, stirring until the color is smooth and uniform throughout the frosting.
  • Once the cake layers are completely cool, place the first layer on a cake stand or serving plate. Spread a layer of one colored frosting on top. Place the second cake layer on top and apply the crumb coat: spread a very thin layer of any frosting color all over the outside of the cake. Refrigerate for 15 minutes to set the crumb coat.
  • To create the tie dye frosting effect on the exterior, apply dollops of each colored frosting randomly around the outside and top of the cake. Use an offset spatula to blend the edges slightly, creating a swirled, colorful design. Serve and enjoy the reveal when the first slice is cut.

Notes

Use gel food coloring rather than liquid for the most vibrant colors both in the cake batter and the frosting. Liquid coloring can dilute the batter and produce muted, dull hues. Make sure all refrigerated ingredients (butter, eggs, milk) are fully at room temperature before you begin; this ensures a smooth batter and a tender crumb. The swirling step is where most bakers go wrong: limit yourself to 3 to 4 strokes per pan. More swirling muddles the colors into brown. The cake layers can be baked up to 2 days ahead, wrapped tightly in plastic, and stored at room temperature. Store the frosted finished cake covered at room temperature for up to 2 days or in the refrigerator for up to 5 days. Individual slices can be frozen for up to 3 months.
